“The production process of our Prosecco is quite different compared to other wines: the grape juice, which is only filtered and un-fermented, is stored at 32°F from the time it is harvested until its fermentation. The wine ferments in 60,000-liter stainless steel tanks using the Martinotti Charmat method. This process, though quite extensive, maximizes the product’s freshness and preserves the natural, delicate, fresh, floral, and fruity aromas of the Glera grapes. By following this method, we guarantee the wine’s freshness year-round. The only challenge we face is an element of unpredictability. While each harvest is different from one another, each vintage always brings something new to discover.” – Winemaker, Marco Rabino
