Description
Appassimento involves drying the grapes before they are fermented. This process results in a concentrated wine with a unique profile.
Appassimento wines are often full-bodied and have a deep, rich color. They are known for their intense fruit flavors and aromas, which are often reminiscent of raisins, figs, and other dried fruits. Appassimento wines can also have notes of spice, chocolate, and tobacco, which add complexity to their profile.
The high sugar concentration in the grapes during the appassimento process also leads to a higher alcohol content in the finished wine. This can make appassimento wines quite powerful and warming, with a long, lingering finish.
Overall, passimento wines are a bold and flavorful option for wine lovers who enjoy complex, full-bodied wines with intense fruit flavors and aromas.

I have become completely smitten with Italian Appassimento style of wine. This is where a percentage of the grapes used to make red wine, have been allowed to ripen to a raisin like consistency. I am completely enamoured by the richness and overall flavour and smoothness of the wine. I also prefer to buy it from Sapori D’Itali because they import the wine they sell and that gives me confidence in the quality.I have also found that they deliver it to me quicker that most suppliers.
