Pantelleria Passito is a special and unique type of dessert wine produced on the island of Pantelleria, which is situated in the Mediterranean Sea between Sicily and Tunisia. Exposure and Altitude: Terracing, facing south – south / east
Type of Soil: Loose volcanic soils of medium texture tending to loose sandy.
Grape Yield: 50 quintals/ha
Harvest Period: The grapes are left to dry in special appassitoi using only the heat of the sun. The harvest is manual and after about three/four weeks of drying natural the grapes destined for vinification in their owncellar.
Vinification Technique: The grapes are harvested by hand, a part is placed at wither for 20 days, and a part started on
fermentation. Next the raisin comes added to the fermenting must, and once the sugars have run out, it is left to macerate for a few minutes
weeks, so maceration facilitates the release of typical substances of the passito.
Organoleptic Characteristics: Golden yellow colour with clear amber reflections, with olfactory sensations of citrus, rose, jasmine and raisins and dried figs. The taste is sweet perfectly balanced with an enveloping aftertaste notes of dried fruit.
Food Pairing: Perfect at the end of a meal with grain cheeses and based desserts of almonds.
